At Olson's we use fresh pork trim in the above products except jerky, dried, & plain ground venison.
There is a 5# minimum starting weight on all sausges.
All weights will double, except sticks which have a 25% loss and jerky that has a 50% loss.
A deposit is required on all sausage orders.
